Pork Ribs with Pineapple

  • 1 cup Tomato Sauce for Seasoning EMBASA®, for the sauce
  • 2 Habanero chiles, for the sauce
  • 3 cloves garlic, for the sauce
  • 1 cup orange juice, for the sauce
  • 1 tablespoon oregano, for the sauce
  • 1/2 teaspoons cumin, for the sauce
  • 1/2 cups pineapple, in cubes, for the sauce
  • pepper, for the sauce
  • salt, for the sauce
  • 1 pineapple
  • 1 cup bacon, fried, for the filling
  • 1 cup deli ham, for the filling
  • 1 pork ribs, 5 to 6 kilos

  • For the sauce: blend the EMBASA® Tomato Dressing Sauce, habanero chili, garlic, orange juice, oregano, cumin, pineapple, salt, and pepper. Set aside.
  • Cook the sauce in a pan over medium heat for 10 minutes or until it thickens slightly. Set aside.
  • Peel the pineapple and hollow it out with a parisienne. Fill it with ham and fried bacon, cover the pineapple with the rack of ribs, and use large toothpicks to secure the meat to the pineapple. Place it on aluminum foil, baste the meat with the sauce, and grill it over indirect heat for 1 hour. Uncover and grill for an additional 30 minutes.
  • Cut the meat with the pineapple and serve.
