Adobo Ribs

This recipe is intended to be eaten as a main dish with different side dishes. We can choose a thousand ways to present them; it's just a matter of putting our imagination to work.

  • 1 kilo pork ribs
  • 2 guajillo chiles, deveined and soaked in hot water
  • oregano
  • olive oil
  • garlic
  • salt, and pepper to taste
  • 150 milliliters orange juice
  • mangoes, in cubes
  • walnuts
  • water, as needed
  • dried árbol chiles, deveined and soaked in hot water
  • cumin seeds
  • 1 dash apple cider vinegar

  • Soak the chiles in hot water for 10 minutes.
  • Clean the ribs. They can be marinated as a whole piece or separated.
  • For the adobo: Blend all the ingredients (chiles, spices, orange juice, a splash of water, vinegar, salt, and pepper), strain, and place the sauce in the same container where you store the meat.
  • Thoroughly immerse the meat in the adobo and let it marinate in the refrigerator for at least 24 hours.
  • Choose your preferred cooking method; if using the oven, it can be at 180°C for 35 minutes or until they look golden but juicy.
