2 guajillo chiles, deveined and soaked in hot water
oregano

150 milliliters orange juice
mangoes, in cubes
walnuts

Soak the chiles in hot water for 10 minutes.
Clean the ribs. They can be marinated as a whole piece or separated.
For the adobo: Blend all the ingredients (chiles, spices, orange juice, a splash of water, vinegar, salt, and pepper), strain, and place the sauce in the same container where you store the meat.
Thoroughly immerse the meat in the adobo and let it marinate in the refrigerator for at least 24 hours.
Choose your preferred cooking method; if using the oven, it can be at 180°C for 35 minutes or until they look golden but juicy.
