If you love pork ribs and don’t know how to prepare them, make this version of golden and juicy ribs with a spicy and seasoned marinade served with potatoes and rice. A delicious and different dish.
5 guajillo chiles, roasted and soaked, for marinade
2 chipotle chiles, roasted and soaked, for marinade
3 ancho chiles, roasted and soaked, for marinade
1/4 teaspoons cumin, whole, roasted, for marinade
1 pinch salt, for marinade
1 teaspoon allspice berry, for marinade
1/2 cups white vinegar, for marinade
1/2 cups orange juice, for marinade
3 tablespoons vegetable oil
1 kilo pork ribs, cut
salt and pepper
1 tablespoon vegetable oil
2 cups new potatoes, cooked and cut in half
fresh cilantro, for garnish

For the marinade, roast garlic with onion, tomato, chiles, and allspice over medium heat in a skillet. Soak the chiles in hot water for 5 minutes or until softened.
Blend the roasted ingredients along with the chiles, soaking water, cumin, salt, vinegar, and orange juice until you obtain a smooth sauce.
Heat a skillet over medium heat with oil and sear the ribs, seasoning with salt. When they are golden, add the potatoes and the marinade. Cook for 20 minutes or until the ribs are cooked. Adjust seasoning.
Serve the ribs drenched in sauce, garnish with fresh cilantro, and accompany with vegetables.
