Ingredients: 2 cloves garlic, roasted, for marinade; 1/2 onions, roasted, for marinade; 1 tomato, roasted, for marinade; 5 guajillo chiles, roasted and soaked, for marinade; 2 chipotle chiles, roasted and soaked, for marinade; 3 ancho chiles, roasted and soaked, for marinade; 1/4 teaspoons cumin, whole, roasted, for marinade; 1 pinch salt, for marinade; 1 teaspoon allspice berry, for marinade; 1/2 cups white vinegar, for marinade; 1/2 cups orange juice, for marinade; 3 tablespoons vegetable oil; 1 kilo pork ribs, cut; salt and pepper; 1 tablespoon vegetable oil; 2 cups new potatoes, cooked and cut in half; fresh cilantro, for garnish

For the marinade, roast garlic with onion, tomato, chiles, and allspice over medium heat in a skillet. Soak the chiles in hot water for 5 minutes or until softened. Blend the roasted ingredients along with the chiles, soaking water, cumin, salt, vinegar, and orange juice until you obtain a smooth sauce.
