Pork Ribs in Green Sauce

If you love pork ribs and don't know how to prepare them, cook these golden and juicy pork ribs inside with a spicy green sauce, seasoned with cumin and cilantro, cooked with potatoes and nopales.

  • 3 tablespoons vegetable oil
  • 1 kilo pork ribs
  • salt and pepper
  • 1 tablespoon vegetable oil, for the sauce
  • 4 cloves garlic, for the sauce
  • 1 white onion, cut into pieces, for the sauce
  • 8 tomatillos, cut into pieces, for the sauce
  • 1 teaspoon cumin, whole
  • 1/2 cups fresh cilantro, for the sauce, divided into 2
  • 4 serrano chiles, without tail, for the sauce
  • 1/2 cups chicken broth, for the sauce
  • 1 pinch salt
  • 2 cups new potatoes, cooked and cut in half
  • 1 cup nopal, cooked and cut into strips
  • parsley, for decoration

  • Preheat the oven to 200° C
  • Heat a skillet over medium heat with the oil, sear the ribs, and season with salt and pepper. When browned, bake for about 35 minutes or until cooked.
  • In a deep skillet, heat the oil and cook the garlic, onion, tomato, cumin, half of the cilantro, and the chiles. Fill with chicken broth and cook until reduced by half. Blend with the remaining cilantro until you obtain a smooth sauce.
  • Remove the ribs from the oven and return to the stove, add the potatoes, nopales, and sauce. Cook for 10 minutes or until thickened. Adjust seasoning.
  • Serve the ribs bathed in sauce, decorate with fresh parsley, and accompany with red rice.
