Pork Ribs in Red Wine

  • 1/2 cups Kikkoman® traditionally brewed soy sauce
  • 1/2 cups butter
  • 5 cloves garlic
  • 2 sprigs rosemary
  • 1/2 tablespoons mixed pepper
  • 1/2 cups red onion
  • 1/2 cups carrot
  • 2 tablespoons flour
  • 3 1/2 cups red wine
  • 2 kilos pork ribs, whole
  • coarse salt, for seasoning
  • pepper, ground, for seasoning
  • mashed potatoes, for serving
  • rosemary, for garnish
  • thyme, for garnish
  • cranberries, fresh, for garnish
  • orange, sliced

  • Prepare the sauce: Melt the butter in a saucepan over medium-low heat and sauté the garlic, rosemary, and mixed pepper until lightly browned. Then add the red onion and carrot. Cook for 3 minutes to let the vegetables take on a glossy tone.
  • Pour the flour all at once into the saucepan and mix with constant movements; you will notice how the flour darkens slightly. This will be the right moment to add the red wine and Kikkoman® soy sauce. Cook until it thickens slightly and remove from heat.
  • Preheat the oven to 190 °C.
  • Season the rack of ribs on both sides, then place it in a deep baking dish that has been greased. Pour the red wine sauce over it (reserve some for drizzling when serving) and cover with aluminum foil. Bake the ribs at 190 °C for 40 minutes. After the time is up, remove the dish from the oven, uncover, and bake for another 10 minutes.
  • Cut the pork ribs in red wine into individual pieces, drizzle with the reserved red wine sauce, and garnish with rosemary, thyme, cranberry, and orange slices. Serve and accompany with mashed potatoes.
