Ribs in Red Sauce

Pork ribs are a delicious option to prepare for a celebration or gathering; they are full of flavor on their own and can be seasoned with a wide variety of ingredients. These are served with a spiced red sauce with a splash of European Extra Virgin Olive Oil® that pairs wonderfully.

  • European Extra Virgin Olive Oil
  • 2 cloves garlic, for the marinade
  • 1/4 onions, for the marinade
  • 3 tomatoes, for the marinade
  • 6 guajillo chiles, without stems and seeds, for the marinade
  • 2 ancho chiles, without stems and seeds, for the marinade
  • 3 morita chiles, without stems and seeds, for the marinade
  • 1/4 cups apple cider vinegar, for the marinade
  • 1/4 sticks cinnamon, in small pieces
  • 1 teaspoon oregano, for the marinade
  • 2 cloves, for the marinade
  • 1/2 teaspoons black peppercorn, for the marinade
  • 1 1/2 cups pork broth, or vegetables, for the marinade
  • salt, for the marinade
  • European Extra Virgin Olive Oil
  • 2 kilos pork ribs
  • salt
  • pepper
  • cilantro, finely chopped
  • white rice, to accompany

Low
  • Heat a skillet over medium heat, add European Extra Virgin Olive Oil®, garlic, onion, tomato, and chiles, and cook for 5 minutes. When the ingredients start to soften, add the spices, vinegar, and broth. Season with salt.
  • Grind all the marinade ingredients with a splash of European Extra Virgin Olive Oil® and set aside.
  • Heat a skillet over medium heat, add European Extra Virgin Olive Oil® and the ribs, and season with enough salt and pepper. Sear the ribs on each side until well browned. Pour in the marinade, cover the ribs, and cook for 30 minutes. Uncover the ribs and continue cooking until the sauce is slightly thickened. Set aside.
  • Serve the ribs with the sauce and a splash of European Extra Virgin Olive Oil®. Accompany with tortillas and rice. Enjoy Life!
