Pork Trotters in Vinegar

  • 500 grams pig's foot
  • water, to cook the trotters
  • 1/2 garlic heads, to cook the trotters
  • 1/2 onions, to cook the trotters
  • 5 allspice berries, to cook the trotters
  • 1 bunch parsley, to cook the trotters
  • 3 bay leaves, to cook the trotters
  • thyme, to cook the trotters
  • 3 tablespoons oregano, to cook the trotters
  • salt, to cook the trotters

  • 3 cloves garlic
  • 1 cup onion, in strips
  • 2 cups carrot, in slices
  • 1 cup cuaresmeño chile, in slices
  • 2 cups cauliflower, in quarters
  • 3 bay leaves
  • 5 allspice berries
  • 3 tablespoons oregano
  • salt
  • 2 cups apple cider vinegar
  • 4 cups water
  • oregano powder, for decoration
  • pickled Jalapeño chile, to accompany
  • lime, to accompany
  • tostadas, to accompany
  • hot sauce, to accompany

  • Place the trotters in a pressure cooker over medium heat and cover with water until ¾ full, then add the garlic, onion, black peppercorns, parsley, bay leaves, thyme, and salt. Cook the trotters for 45 minutes or until well cooked. Remove the trotters from the pot with a strainer and set aside.
  • Heat the oil in a saucepan over medium heat and cook the garlic, onion, carrot, chiles, cauliflower, bay leaves, pepper, oregano, and salt.
  • Stir constantly with a spatula for about 5 minutes or until the vegetables are slightly golden, then add the vinegar, water, and trotters. Stir with a spoon until everything is well combined, cover the pot, and cook on low heat for another 15 minutes or until the vegetables are well cooked but not mushy. Remove the trotters from the heat and let them rest.
  • Serve the pork trotters in vinegar on a flat plate and accompany with tostadas, lime, and hot sauce.
