Pork in green sauce with purslane is a very traditional dish in Mexican families. Purslane is considered a superfood due to its various properties such as potassium, calcium, magnesium, and phosphorus. Be sure to try this delicious homemade dish.

In a pot of boiling water, cook the pork with the garlic, onion, and salt until tender. Drain and set aside.
For the sauce, cook the tomatoes in boiling salted water for 15 minutes along with the serrano chili.
Blend the tomatoes, chiles, garlic, onion, cumin, and cilantro.
Heat one tablespoon of oil in a pot over medium heat and pour in the sauce, season with salt and pepper, and cook for another 15 minutes or until the sauce thickens.
In a pot, fry the meat with the remaining oil, pour in the green sauce, add the purslane, and cook for 15 minutes or until they release their juice and reduce a little.
Serve with white rice, cooked beans, and tortillas.
