Pork with Purslane

Pork in green sauce with purslane is a very traditional dish in Mexican families. Purslane is considered a superfood due to its various properties such as potassium, calcium, magnesium, and phosphorus. Be sure to try this delicious homemade dish.

  • 500 grams pork ribs
  • 500 grams pork chump
  • 5 garlic, peeled
  • 1/2 onions
  • salt
  • 1 kilo tomatillo, for the green sauce
  • 5 serrano chiles, for the green sauce
  • 1 clove garlic, for the green sauce
  • 1/4 onions, for the green sauce
  • 1 teaspoon cumin, for the green sauce
  • 1 tablespoon fresh cilantro, for the green sauce
  • salt and pepper
  • 4 tablespoons vegetable oil, for the sauce and for the meat
  • 2 cups purslane

  • In a pot of boiling water, cook the pork with the garlic, onion, and salt until tender. Drain and set aside.
  • For the sauce, cook the tomatoes in boiling salted water for 15 minutes along with the serrano chili.
  • Blend the tomatoes, chiles, garlic, onion, cumin, and cilantro.
  • Heat one tablespoon of oil in a pot over medium heat and pour in the sauce, season with salt and pepper, and cook for another 15 minutes or until the sauce thickens.
  • In a pot, fry the meat with the remaining oil, pour in the green sauce, add the purslane, and cook for 15 minutes or until they release their juice and reduce a little.
  • Serve with white rice, cooked beans, and tortillas.
