Sausage Alambre with Vegetables

Prepare this easy and economical alambre recipe as it is made with sausages and chorizo combined with corn, red onion, peppers, and zucchini. Serve it with a roasted salsa from a molcajete and corn tortillas.

  • 2 ears corn, cut into small portions
  • 1/2 cups chorizo, crumbled
  • 2 tablespoons garlic, finely chopped
  • 1 red onion, cut into pieces
  • 10 sausages, sliced
  • 1 cup button mushrooms, sliced
  • 1 yellow bell pepper, cut into pieces
  • 1 red bell pepper, cut into pieces
  • 1 green bell pepper, cut into pieces
  • 1 pumpkin, cut into half-moons
  • 1 pinch salt and pepper
  • salsa, roasted, to accompany
  • corn tortillas, to accompany
  • lime, to accompany

  • Heat a grill over high heat and roast the corn until golden, remove from the grill and set aside.
  • Add the chorizo to the grill with the garlic and onion, add the sausages and cook until browned. On the side, cook the mushrooms, peppers, zucchini, and season to taste with salt and pepper.
  • Serve the alambre and accompany with tortillas and roasted salsa.
