Sift the flours and baking powder. Mix them in a bowl, add the pepper and chicken broth powder.
Beat and incorporate the eggs one by one, pour in the honey and gradually add the sparkling water. Add salt.
Heat the oil.
Insert each sausage onto a wooden stick. Dip each skewer into the batter, let them drain, and fry them. Once fried, drain the excess oil on paper towels.
For the sauce: remove the skin and seeds from the tomatoes. Add the tomatoes to a blender along with the chipotle. Blend them, trying not to add water.
Puree the onion and garlic. You can use a food processor for this purpose.
In a skillet, add the oil and incorporate the tomato puree. Allow the mixture to thicken to form a paste. Add the onion and garlic mixture.
Once you have a paste, add honey, water, vinegar, salt, chili, and pepper. Stir well and reduce the temperature to low.
Once it thickens, remove from the skillet and allow to cool.
