Sausage Skewers with Homemade Sauce

  • 1 Oléico® safflower oil
  • 1 kilo sausages
  • 1 cup pancake mix
  • 2 cups wheat flour
  • 1 tablespoon baking powder
  • 1 tablespoon granulated chicken bouillon
  • 1/2 teaspoons pepper
  • 2 eggs
  • 2 tablespoons honey
  • 1 1/2 cups sparkling water
  • 1 teaspoon salt
  • 2 tablespoons Oléico® safflower oil, for the ketchup
  • 6 tomatoes, for the ketchup
  • 3 chipotle chiles in adobo sauce, for the ketchup
  • 1/4 cups honey, for the ketchup
  • 1/3 cups water, for the ketchup
  • 1/3 cups apple cider vinegar, for the ketchup
  • 3/4 teaspoons coarse salt, for the ketchup
  • 1 clove garlic, for the ketchup
  • 1/2 onions, for the ketchup
  • 1 teaspoon pepper, for the ketchup

  • Sift the flours and baking powder. Mix them in a bowl, add the pepper and chicken broth powder.
  • Beat and incorporate the eggs one by one, pour in the honey and gradually add the sparkling water. Add salt.
  • Heat the oil.
  • Insert each sausage onto a wooden stick. Dip each skewer into the batter, let them drain, and fry them. Once fried, drain the excess oil on paper towels.
  • For the sauce: remove the skin and seeds from the tomatoes. Add the tomatoes to a blender along with the chipotle. Blend them, trying not to add water.
  • Puree the onion and garlic. You can use a food processor for this purpose.
  • In a skillet, add the oil and incorporate the tomato puree. Allow the mixture to thicken to form a paste. Add the onion and garlic mixture.
  • Once you have a paste, add honey, water, vinegar, salt, chili, and pepper. Stir well and reduce the temperature to low.
  • Once it thickens, remove from the skillet and allow to cool.
