Stuffed Mortadella

  • 1 cup mortadella, chopped
  • 1 cup Manchego cheese, grated

  • 2 tablespoons breadcrumbs
  • 2 cups egg
  • 3 cups tomato sauce, for accompaniment
  • 1 cup fresh parsley, for garnish

  • Slice the mortadella thickly and make an incision on one side to be able to open it and fill it.
  • Stuff the slice of mortadella with cheese and close it.
  • Coat the mortadella in flour, egg, and breadcrumbs to bread it.
  • Brown the slices of mortadella in a non-stick skillet with a little oil and set aside on paper towels.
  • In the same pan where you browned the mortadella, add the onion and pour in the tomato sauce.
  • Serve the stuffed mortadella and garnish with fresh basil or parsley leaves.
