1 cup mortadella, chopped
1 cup Manchego cheese, grated
flour
2 tablespoons breadcrumbs
2 cups egg
3 cups tomato sauce, for accompaniment
1 cup fresh parsley, for garnish

Slice the mortadella thickly and make an incision on one side to be able to open it and fill it.
Stuff the slice of mortadella with cheese and close it.
Coat the mortadella in flour, egg, and breadcrumbs to bread it.
Brown the slices of mortadella in a non-stick skillet with a little oil and set aside on paper towels.
In the same pan where you browned the mortadella, add the onion and pour in the tomato sauce.
Serve the stuffed mortadella and garnish with fresh basil or parsley leaves.
