Taco al Pastor Hamburger Trompo

  • 1/4 cups Inés® Grape Oil
  • 1/2 cups onion, roasted
  • 2 cloves garlic, roasted
  • 3 tomatoes, roasted
  • 10 guajillo chiles, rehydrated
  • 1/4 cups orange juice
  • 1/4 cups apple cider vinegar
  • 1 cup achiote liquid
  • pepper

  • 3 kilos ground pork
  • 1/2 cups breadcrumbs
  • 2 slices pineapple
  • 15 slices Manchego cheese
  • skewer stick, long

  • Blend the Inés® Grape Oil, onion, garlic, tomato, guajillo chili, orange juice, vinegar, achiote, pepper, and salt for 5 minutes and set aside.
  • In a bowl, mix the ground meat, ½ cup of the sauce, and the breadcrumbs until combined. Form 10 to 15 pieces of hamburger meat by rolling them into balls the size of your hand and flattening them. Set aside.
  • To form the taco al pastor hamburger trompo: Place a slice of pineapple, a hamburger patty, a slice of cheese, and repeat the process until you finish the meat and cheese. End with a slice of pineapple.
  • Place the taco al pastor hamburger trompo on a grill with preheated charcoal and cook for 80 minutes. Uncover and brush with the marinade.
  • Serve the taco al pastor hamburger trompo on a board, assemble your tacos, and accompany with tortillas, onion, cilantro, and salsa.
