Tacos al Pastor

Deliciously authentic Mexican tacos al pastor! They are very easy to prepare; the only thing that takes time is the marinade, which lasts 4 hours, but the rest is super easy and totally worth it!

  • 10 guajillo chiles
  • 2 glasses water, hot
  • 1/2 onions
  • 2 cloves garlic
  • 1/2 cups apple cider vinegar
  • 2 cloves
  • 1 teaspoon cumin
  • salt
  • pepper
  • 1 kilo pork tenderloin, pork steak
  • vegetable oil
  • 1/4 pineapples, cut into cubes
  • tortillas, small taco holders
  • 1/2 onions, chopped (for garnish)
  • fresh cilantro, washed, disinfected, and chopped (for garnish)
  • limes
  • salsas, to taste

  • Soak the chiles in water until softened, drain them, and blend with the onion, garlic, vinegar, cloves, cumin, salt, and pepper.
  • Season the steaks with salt and pepper and marinate them with the previous sauce; let them rest for at least 4 hours in the refrigerator.
  • Cut them into small strips and fry them in a pan with a little hot oil. When the meat is cooked, add the pineapple and mix gently; remove from heat.
