Pineapple Sauce Chicken with Avocado

  • 1 cup pineapple
  • 1 tomato, roasted
  • 1 chipotle chile
  • 1/8 onions, grilled
  • 1/4 cups fresh cilantro
  • 2 Habanero chiles, roasted
  • 1 garlic
  • 1/4 cups canned pineapple syrup
  • 1/4 cups pineapple juice
  • 1/2 tablespoons cumin
  • 1 tablespoon salt
  • 1/2 tablespoons pepper

  • 2 chicken breasts
  • 1/2 cups pineapple, in cubes, for the pico de gallo
  • 1 avocado, in cubes, for the pico de gallo
  • 1/2 cups fresh cilantro, finely chopped, for the pico de gallo
  • 1/4 cups red onion, finely chopped, for the pico de gallo
  • 2 serrano chiles, finely chopped, for the pico de gallo
  • 2 tablespoons lime juice, for the pico de gallo
  • white rice, for serving

  • Blend the pineapple with the tomato, chipotle, onion, cilantro, habanero chili, garlic, pineapple syrup, pineapple juice, cumin, salt, and pepper until you have a smooth sauce.
  • In a skillet, sear the chicken with oil on both sides and cook over medium heat, add the sauce and cook until the chicken is done.
  • For the pico de gallo, mix in a bowl the pineapple with the avocado, cilantro, red onion, serrano chili, lime juice, salt, and pepper.
  • On a plate, place a mirror of sauce, the chicken, and garnish with the pineapple pico de gallo. Serve with rice and enjoy.
