Pork and Apple Skewers

Delicious pork, apple, and onion skewers with a tasty sauce.

  • 600 grams pork loin, cut into cubes
  • 1/2 cups peach jam
  • 2 tablespoons cider vinegar
  • 1 tablespoon tomato purée
  • 2 tablespoons olive oil
  • 1 red onion, cut into cubes or thick strips (8)
  • 1 apple, peeled and cut into cubes (8)
  • 1 pinch coarse salt

  • Preheat a grill to medium-high heat.
  • In a medium bowl, make the sauce by combining the jelly, vinegar, tomato puree, and 1 tablespoon of oil. Season with salt and pepper and set aside.
  • Assemble 4 skewers with 4 cubes of pork, 2 cubes of onion, and 2 cubes of apple. (Start with pork and end with apple). Season with salt and pepper and a little oil.
  • Place the skewers on the grill and cook for 6-8 minutes.
  • With a spoon, baste the skewers with the sauce and turn them over, cooking for an additional 5 minutes or until the pork is well cooked. You can add more sauce while cooking.
