Pork Carnitas

This recipe is a delicious pork carnitas dish that you can prepare at home for breakfast, lunch, or even as the main meal. Serve with flour or corn tortillas and make some delicious carnitas tacos.

  • 1 pork tenderloin, cut into large cubes
  • 1/2 teaspoons salt
  • 2 cans serrano chile, chopped
  • 3 cloves garlic, shredded
  • 1/4 cups chipotle chile in adobo sauce
  • 3 1/4 cups water
  • 1 1/2 cups white rice
  • 1/4 cups lime juice, fresh
  • 1/4 cups fresh cilantro, chopped

  • Place the pork loin in a slow cooker and season with salt.
  • Place the chiles and garlic on top of the loin.
  • Add the chipotle adobo and 1/2 cup of water.
  • Cover the pot and cook for 7 hours on low heat.
  • In a separate pot, boil the rice with 2 3/4 cups of water.
  • Add lime juice and cilantro.
  • Reduce heat to low, cover, and cook for 20 minutes.
  • Remove the loin from the pot and use 2 forks to shred it.
  • Return to the pot and let marinate for 15 minutes to absorb some of the liquid.
  • Serve over the rice.
