Pork Chicharrón in Green Sauce

You can't miss the classic chicharrón in green sauce. This chicharrón, accompanied by this delicious sauce made with tomatoes, onion, garlic, serrano chili, and flavored with cilantro seeds, will be ideal for serving in tacos, in broth, or however you prefer.

  • 10 tomatillos
  • 1/2 white onions
  • 4 serrano chiles, deveined and seedless
  • 2 cloves garlic
  • 1 bunch fresh cilantro
  • 1 pinch salt
  • 5 cups pork rinds, chopped
  • 1 serrano chile, sliced into rings
  • 1/2 onions, sliced into rings
  • 10 corn tortillas

  • Heat a small pot with water, add the tomatoes, white onion, chiles, and garlic to cook them thoroughly. Remove the cooking liquid.
  • Add all the cooked ingredients, along with cilantro and salt, to the blender. Blend thoroughly. Set aside.
  • Heat a small pot over medium heat with the oil, add the sauce, and cook for 10 minutes or until it reaches a boiling point.
  • Add the chicharrón so it softens with the sauce. Remove the preparation from the heat, serve, and accompany with corn tortillas. Enjoy.
