  • 4 boneless pork chops, Amara or Cowboy Amara
  • 4 guajillo chiles, without seeds or veins
  • 2 ancho chiles, without veins or seeds
  • 1 tomato
  • 1 clove garlic
  • 1/2 onions
  • 1 clove
  • 1 cinnamon, in slices
  • 1 tablespoon dried oregano
  • 1/2 tablespoons ground cumin
  • 125 milliliters apple cider vinegar
  • 1 tablespoon raw sugar
  • 40 milliliters vegetable oil
  • 2 grams sea ​​salt

  • Toast the chiles until lightly browned and hydrate them in hot water for 10 minutes.
