Pork Chops in Chipotle Sauce

Delicious marinated pork chops in a chipotle chili sauce accompanied by a parsley sauce with vinegar and garlic.

  • 4 pork chops
  • 1 can chipotle chile
  • 1/2 cups chicken broth
  • 1 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons white vinegar
  • 1 pinch oregano
  • 2 cloves garlic
  • 1/2 onions, finely chopped

  • In a blender, mix the chicken broth and chipotle peppers until you get a liquid sauce.
  • In a ziploc bag, marinate the pork chops with the chipotle sauce in the refrigerator for at least 2 hours.
  • Heat the grill and remove the chops from the marinade.
  • While the grill is heating, prepare the sauce by combining in the blender the parsley, olive oil, white vinegar, oregano, garlic, and season with salt and pepper. Then mix this sauce with the chopped onion.
  • Grill the chops with cooking spray to prevent sticking for 5-6 minutes on each side. Serve with the sauce.
