Pork Chops in Oven with Tomato and Tamarind Sauce

Grilled pork chops accompanied by a sauce of Del Fuerte® Natural Tomato Purée with the sweet and sour flavor of tamarind, a hint of ginger, and topped with pineapple slices.

  • 3 teaspoons butter
  • 1/2 white onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 teaspoons ginger, finely chopped
  • 1/2 cups pineapple, cut into small cubes
  • 1 teaspoon sugar
  • 1 cup tamarind concentrate
  • 1 cup Del Fuerte® natural tomato purée
  • 1/2 cups chicken broth
  • 1 sprig thyme
  • 16 smoked pork chops
  • 1 kilo pineapple, sliced into 1 cm wide, 5 cm long, and thick pieces

  • Add the butter, finely chopped garlic, and ginger to a medium pot. Cook over medium heat for 5 minutes, then add the pineapple chunks and continue cooking for 5 more minutes. Add the teaspoon of sugar, tamarind concentrate, and Del Fuerte® Natural Tomato Purée, stirring to dissolve well, and let it cook for another 5 minutes. Finally, add the thyme, chicken broth, mix, and let it reduce to concentrate the flavor of the sauce. Set aside.
  • Preheat the grill to high heat, cook the chops and pineapple slices until cooked with classic grill marks. Set aside.
  • Serve the chops and drizzle with the sweet and sour preparation. Serve with pineapple slices for garnish.
