Place enough vegetable oil in a deep skillet and heat it, sauté the onion and garlic until they have a shiny tone. Then add the tomatillo and the cuaresmeño chili, cook over medium-low heat for 5 minutes or until the vegetables start to soften, then add the cumin and beef broth. Cook for 5 more minutes and remove from heat.
Blend the previous mixture together with the cilantro, salt, and pepper until fully integrated. Set aside until use.
Pour more vegetable oil into the same pan where you prepared the sauce and once hot, add the pork and brown until sealed. Add the potatoes and pour in the blended sauce, lower the heat, season with salt and pepper. Cook over medium-low heat for 30 minutes.
