Ingredients: 2 tablespoons vegetable oil; 1/4 onions, in cubes; 2 cloves garlic, without skin; 500 grams tomatillo, in quarters; 2 cuaresmeño chiles, red, without stem; 1 tablespoon cumin seeds; 2 cups beef broth; 1/4 bunches cilantro, only the leaves; salt; pepper; 3 tablespoons vegetable oil, for pork; 1 kilo pork, lean, in cubes; 3 potatoes, without skin, in quarters; cuaresmeño chile, red, sliced for accompaniment; cilantro, leaves, for garnish

Place enough vegetable oil in a deep skillet and heat it, sauté the onion and garlic until they have a shiny tone. Then add the tomatillo and the cuaresmeño chili, cook over medium-low heat for 5 minutes or until the vegetables start to soften, then add the cumin and beef broth. Cook for 5 more minutes and remove from heat. Blend the previous mixture together with the cilantro, salt, and pepper until fully integrated. Set aside until use.
