Pork Loin in Mustard Sauce

Prepare this juicy and delicious pork loin with a herb and whole grain mustard crust, accompanied by a smooth mustard and honey sauce that makes the perfect combination. You can serve it with mashed potatoes or a side of rice, it will be a hit.

  • 2 tablespoons olive oil
  • 4 cloves garlic, chopped
  • 1 tablespoon fresh thyme
  • 2 tablespoons basil, finely chopped
  • 1 tablespoon rosemary, finely chopped
  • 2 tablespoons old style mustard
  • 1 1/2 kilos pork loin, clean
  • 1 cup whipping cream, for the sauce
  • 1 clove garlic, for the sauce
  • 1 tablespoon mustard
  • 1/4 cups honey, for the sauce
  • 1/2 cups chicken broth, for the sauce
  • 1 tablespoon rosemary, for the sauce
  • 1 tablespoon butter

  • Preheat the oven to 220°C.
  • In a bowl, mix the salt with the oil, garlic, thyme, basil, rosemary, and whole grain mustard. Rub the pork loin with this mixture and cover it thoroughly.
  • Wrap the loin in aluminum foil and place it on a baking tray, bake for about 40 minutes. Remove the aluminum foil and bake for 20 more minutes or until well cooked. Set aside.
  • For the sauce, blend the heavy cream with the garlic, mustard, honey, broth, and rosemary in your T-fal® Infiny Force Blender using the “sauce” function for 10 seconds or until you achieve the desired consistency.
  • Heat a pot over medium heat and melt the butter. Add the sauce and cook for 10 minutes, season with salt.
  • Slice the loin and serve with the sauce, garnish with fresh rosemary.
