Pork Loin Stuffed in Tamarind Sauce

  • 1 pork loin, 3 kg, cleaned
  • 1/4 cups almonds, for stuffing the loin
  • 1/4 cups prunes, boneless, for stuffing the loin
  • 1/4 cups dried apricots, for stuffing the loin
  • 1/4 cups garlic, in cloves, for stuffing the loin
  • 2 tablespoons full seasoning Sassón®, for seasoning the roll
  • 20 slices bacon, to cover the loin
  • 3 cloves garlic, roasted, for tamarind sauce
  • 1/4 onions, roasted, for tamarind sauce
  • 2 morita chiles, roasted, soaked in hot water, for tamarind sauce
  • 1/2 cups piloncillo, grated, for tamarind sauce
  • 3 cups tamarind concentrate, for the sauce
  • 2 tablespoons fresh thyme, for the tamarind sauce
  • 3 tablespoons apple cider vinegar, for the tamarind sauce
  • 1 teaspoon allspice berry, for the tamarind sauce
  • 1/4 cups chicken broth, for the tamarind sauce
  • 1/4 teaspoons clove, for the tamarind sauce
  • 1 tablespoon butter

  • Preheat the oven to 200° C On a cutting board, place the loin and, using a knife, make holes all over the piece of meat. Insert almonds, prunes, apricots, and garlic into each hole, sprinkle Sazón Completa Sassón® on the loin to season. Set aside.
  • On a baking sheet lined with aluminum foil, arrange the bacon and place the loin, roll the preparation using the aluminum foil, covering the piece well and bake for 40 minutes.
  • Remove from the oven, uncover the aluminum, and bake for an additional 20 minutes for the bacon to brown. Let rest so the juices can settle.
  • For the tamarind sauce, blend all the ingredients until you obtain a smooth sauce.
  • Heat a skillet over medium heat with the butter, add the sauce and cook for 10 minutes until it slightly reduces, remove from heat and set aside.
  • On a cutting board, slice the loin to the desired thickness, serve on a plate with mashed potatoes. Drizzle with tamarind sauce and garnish with fresh thyme.
