1 cup prunes
1/3 cups chipotle chile
2 cloves garlic
1/4 onions
2 allspice berries
1 teaspoon salt
4 cups cola, 1/2 cup for blending and the rest for baking
800 grams pork loin
1 tablespoon vegetable oil
1/2 cups onion, finely chopped
2 cups new potatoes, cut in halves
parsley, finely chopped for garnish

Preheat the oven to 200°C.
Blend the prunes with the chipotle, garlic, onion, allspice, salt, and ½ cup of Coca-Cola until you have a thick sauce.
On a cutting board, brine the loin and spread with the previous mixture.
In a skillet over medium heat, sauté the onion with the oil, add the pork loin, and sear on both sides, basting constantly with the plum sauce.
Place the loin in a baking dish, spread the remaining sauce, and add the potatoes, salt, and the rest of the Coca-Cola.
Cover with aluminum foil and bake for 45 minutes or until the loin reaches an internal temperature of 65°C.
Remove from the oven and slice into medallions on a cutting board, serve with the potatoes and garnish with chopped parsley.
