Pork Loin with Coca-Cola

You won't believe how easy it is to prepare this Coca-Cola pork loin with baby potatoes, perfect for special occasions or family meals; its sweet and sour flavor with a hint of spiciness will delight them.

  • 1 cup prunes
  • 1/3 cups chipotle chile
  • 2 cloves garlic
  • 1/4 onions
  • 2 allspice berries
  • 1 teaspoon salt
  • 4 cups cola, 1/2 cup for blending and the rest for baking
  • 800 grams pork loin
  • 1 tablespoon vegetable oil
  • 1/2 cups onion, finely chopped
  • 2 cups new potatoes, cut in halves
  • parsley, finely chopped for garnish

  • Preheat the oven to 200°C.
  • Blend the prunes with the chipotle, garlic, onion, allspice, salt, and ½ cup of Coca-Cola until you have a thick sauce.
  • On a cutting board, brine the loin and spread with the previous mixture.
  • In a skillet over medium heat, sauté the onion with the oil, add the pork loin, and sear on both sides, basting constantly with the plum sauce.
  • Place the loin in a baking dish, spread the remaining sauce, and add the potatoes, salt, and the rest of the Coca-Cola.
  • Cover with aluminum foil and bake for 45 minutes or until the loin reaches an internal temperature of 65°C.
  • Remove from the oven and slice into medallions on a cutting board, serve with the potatoes and garnish with chopped parsley.
