Place the pork loin with the fat side facing up in a roasting dish.
In a food processor, process the garlic, rosemary, lemon zest, and fennel. Add the olive oil, mustard, salt, and pepper, and process until a paste is formed.
Spread the paste over the pork and rub it in well with your hands.
Roast the pork for 1 hour or until its internal temperature reaches 70 degrees Celsius. Remove from the oven and place on a cutting board, cover with aluminum foil, and allow to rest for 20 minutes.
Remove the aluminum foil and slice the loin. Serve.
