Pork Rib with Nopales

These pork ribs are a homemade dish, rich in nutrients and flavor, and ideal for any meal during the week as they are easy to prepare and pair well with Zuko®.

  • 1 kilo pork ribs
  • 1/4 onions, for cooking the ribs
  • 1/2 heads garlic, cut in half, for cooking the ribs

  • 6 tomatoes, grilled
  • 1/4 onions, grilled
  • 1 clove garlic, grilled
  • 2 pasilla chiles, grilled and soaked
  • 4 morita chiles, grilled and soaked
  • 3 allspice berries, grilled
  • 1 teaspoon cilantro seeds, grilled
  • 1 cup pork broth, for cooking the ribs
  • 2 tablespoons lard
  • 3 cups pork broth
  • 2 cups nopal, cut into thin strips
  • salt
  • 1 cup cilantro, coarsely chopped
  • tortillas, for serving
  • Zuko® Lime instant powder drink, for serving

  • For cooking the ribs, place the ribs in a pot with enough water along with the onion, garlic, herbs, and salt, covering with water until it surpasses the ingredients by 5 cm. Cook for 40 minutes once it starts to boil. Remember to remove the foam that forms on the surface. Once cooked, remove from the pot and reserve the broth.
  • For the sauce, blend the grilled tomato, grilled onion, grilled garlic, pasilla chiles, morita chiles, grilled allspice, roasted cilantro seeds, and add one cup of the broth from cooking the ribs to obtain a smooth and light sauce. Reserve.
  • Heat a saucepan or pot over medium heat with the lard and fry the cooked ribs there; then add the blended sauce, the remaining pork cooking broth, and the nopales, season with salt and cook for 15 minutes.
  • Once you turn off the stew, add the cilantro.
  • Serve the ribs with nopales, accompany with tortillas and a Zuko® lemon-flavored drink.
