Ingredients: water, for cooking the ribs; 1 kilo pork ribs; 1/4 onions, for cooking the ribs; 1/2 heads garlic, cut in half, for cooking the ribs; herb bundle, for cooking the ribs; salt, for cooking the ribs; 6 tomatoes, grilled; 1/4 onions, grilled; 1 clove garlic, grilled; 2 pasilla chiles, grilled and soaked; 4 morita chiles, grilled and soaked; 3 allspice berries, grilled; 1 teaspoon cilantro seeds, grilled; 1 cup pork broth, for cooking the ribs; 2 tablespoons lard; 3 cups pork broth; 2 cups nopal, cut into thin strips; salt; 1 cup cilantro, coarsely chopped; tortillas, for serving; Zuko® Lime instant powder drink, for serving

For cooking the ribs, place the ribs in a pot with enough water along with the onion, garlic, herbs, and salt, covering with water until it surpasses the ingredients by 5 cm. Cook for 40 minutes once it starts to boil. Remember to remove the foam that forms on the surface. Once cooked, remove from the pot and reserve the broth. For the sauce, blend the grilled tomato, grilled onion, grilled garlic, pasilla chiles, morita chiles, grilled allspice, roasted cilantro seeds, and add one cup of the broth from cooking the ribs to obtain a smooth and light sauce. Reserve.
