Pork Ribs Encacahuatado

Strong and spicy flavors can indeed coexist in the same typical Mexican dish, and the proof of this is this recipe for Pork Ribs Encacahuatado.   • 2 liters water
  • 1 kilo pork ribs, in pieces
  • 1/2 onions
  • 4 cloves garlic
  • 1 cup peanuts
  • 2 tablespoons sesame seeds
  • 3 tablespoons vegetable oil, divided
  • 3 guajillo chiles, deveined and seedless
  • 2 chipotle chiles, dry, deveined and seedless
  • 3 tomatoes
  • 1/4 onions
  • 2 cloves garlic
  • 4 black pepper, whole
  • 1 tablespoon cumin, whole
  • 1/2 sticks cinnamon
  • 2 cups pork broth
  • 2 cups zucchini, cooked and cut into quarters

  • In a pot, heat the water, add the meat, onion, garlic, and salt, and cook for about an hour, skimming off excess foam during cooking. Set aside.
  • For the encacahuatado, in a skillet over medium heat, toast the peanuts until golden, add the sesame seeds, and lightly toast. Remove and set aside.
  • In a saucepan over medium heat, heat a tablespoon of oil and fry the guajillo chili, chipotle chili, tomato, onion, garlic, pepper, cumin, cinnamon, and add the cooking broth from the meat. Once it comes to a boil, cook for 10 minutes.
  • Blend the previous ingredients with the peanuts and sesame seeds you toasted earlier.
  • In a saucepan over medium heat, heat another tablespoon of oil, fry the sauce, and cook, stirring constantly until it thickens slightly. Set aside.
  • In a pot over medium heat, heat the remaining oil, fry the ribs, season with salt and pepper. Add the peanut sauce and let it come to a boil. Incorporate the zucchini and cook for 5 minutes.
  • Serve with toasted peanuts, accompanied by beans and white rice.
