Pork Ribs in Chipotle Sauce

  • 1 tablespoon allspice berry, whole, for seasoning
  • 3 dried chipotle chile, for seasoning
  • 2 cloves garlic, for seasoning
  • 1 1/2 kilos pork ribs
  • 3 tablespoons vegetable oil, for sealing the meat
  • 1/2 heads garlic, roasted, cut in half
  • 1/4 bunches fresh thyme
  • 6 chipotle chiles, dried, without stem
  • 2 cups meat drippings
  • 1/2 cups Kikkoman® traditionally brewed soy sauce
  • 1/4 cups honey, for basting
  • 2 tablespoons Kikkoman® traditionally brewed soy sauce, for basting
  • 1 tablespoon cornstarch, for the sauce
  • fresh thyme, for garnish
  • red onion, pickled, for garnish

  • To season, in a mortar, crush the sea salt along with the allspice and dried chipotle chili. Once the ingredients are crushed, add the garlic powder, mix, and set aside.
  • Cover the pork rack with the spice mixture and let it marinate for 15 minutes.
  • In a sufficiently large pot with hot vegetable oil, sear the rack on both sides.
  • Preheat the oven to 200 °C.
  • Once the rack is seared, place it in a deep tray, add the half head of roasted garlic, thyme, the pieces of chipotle chili, the meat juice, and Kikkoman® Soy Sauce. Cover the tray with aluminum foil and bake for 45 minutes at 200 °C.
  • While the rack is baking, mix the honey with Kikkoman® Soy Sauce to baste the meat. Set aside.
  • With the help of a ladle, remove the juices from the meat, the garlic, and the chipotle chilies. Pour the ingredients into a blender and add the cornstarch. Blend for 3 minutes. Pour the preparation into a pot and cook for 5 minutes.
  • Serve the pork rack on a bed of sauce and decorate with onion and fresh thyme.
