10 cascabel chiles, for the sauce, hydrated and deveined
4 guajillo chiles, for the sauce, hydrated and deveined
4 cloves garlic, for the sauce
1 cup water, for the sauce
1/4 cups orange juice

1 kilo pork loin, in medium cubes of 3 cm
1 1/2 teaspoons oregano
1 teaspoon cumin
2 leaves bay
2 tablespoons lard

In a pot, heat the oil and add the onion, garlic, cascabel chili, guajillo chili, and fry until the onion is golden, add the water and salt. Cook for 10 minutes.
Blend the chiles with the orange juice, oregano, and cumin. Set aside.
In a pot, add the lard and fry the meat over medium heat until browned for 15 minutes.
Add the blended sauce, bay leaf, season with salt and pepper. Cook for 20 minutes over medium heat.
Serve on a wide plate accompanied by rice and beans.
