Ingredients: 1 onion, for the sauce; 2 tablespoons lard, for the sauce; 10 cascabel chiles, for the sauce, hydrated and deveined; 4 guajillo chiles, for the sauce, hydrated and deveined; 4 cloves garlic, for the sauce; 1 cup water, for the sauce; 1/4 cups orange juice; salt; 1 kilo pork loin, in medium cubes of 3 cm; 1 1/2 teaspoons oregano; 1 teaspoon cumin; 2 leaves bay; 2 tablespoons lard; salt; pepper

In a pot, heat the oil and add the onion, garlic, cascabel chili, guajillo chili, and fry until the onion is golden, add the water and salt. Cook for 10 minutes. Blend the chiles with the orange juice, oregano, and cumin. Set aside.
