Pork Steak in Adobo

  • 6 guajillo chiles, deveined and seeded, soaked
  • 2 ancho chiles, deveined and seeded, soaked
  • 1/2 teaspoons cumin
  • 1/2 teaspoons pepper
  • 1/2 teaspoons oregano
  • 2 cloves garlic
  • 1/2 cups apple cider vinegar
  • 1 tablespoon salt
  • 1 kilo pork steak
  • 2 tablespoons vegetable oil, for frying
  • 1 avocado, for the guacamole
  • 1/4 cups onion, finely chopped, for the guacamole
  • 1/4 cups onion, finely chopped, for the guacamole
  • 1/4 cups tomato, diced, for the guacamole
  • 3 tablespoons serrano chile, finely chopped, for the guacamole
  • 2 tablespoons fresh cilantro, finely chopped, for the guacamole
  • 3 tablespoons lime juice, for the guacamole

  • Blend the chiles with the cumin, pepper, oregano, garlic, apple cider vinegar, and salt.
  • Pour the adobo over the meat and marinate for 2 hours.
  • For the guacamole, in a bowl mash the avocado until you get a puree. Mix with the onion, tomato, chili, cilantro, lime juice, and season to taste.
  • In a skillet over medium heat, heat the oil, cook the seasoned meat with a little salt and pepper. When it is golden brown, remove and serve with the guacamole.
