Quelites with Pork in Green Sauce

  • 8 tomatillos, cooked, for the sauce
  • 3 serrano chiles, cooked, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1/4 bunches cilantro, for the sauce
  • 2 cups chicken broth, for the sauce
  • 2 tablespoons vegetable oil, for the sauce
  • 1 kilo pork ribs, cooked
  • 1/4 cups onion, sliced
  • 2 cups quelite, cleaned and disinfected
  • salt, for seasoning
  • pepper, for seasoning

  • For the sauce: Blend the tomatoes, green chili, onion, garlic, cilantro, and chicken broth. Set aside.
  • Add oil to a saucepan over medium heat, fry the ribs, then add the onion and sauté for 3 more minutes. Then, pour in the sauce, cook for 10 minutes, adjust the seasoning, add the quelites, and cook for 3 more minutes.
  • Serve in a deep plate and accompany with Mexican rice and beans from the pot.
