Rib Tacos

Don't let yourself crave tacos again and prepare this Rib Taco recipe that will surely turn out better than your favorite taco vendor's. For these typical tacos, you can use a stone-ground green sauce made from grilled chiles, served with delicious green onions and accompanied by a tasty Del Valle Frut.

  • 5 tomatillos, for the sauce
  • 1/4 white onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1 tablespoon vegetable oil, for the sauce
  • 2 Jalapeño chiles, for the sauce
  • coarse salt, for the sauce
  • 1/4 cups lime juice, for the sauce
  • 500 grams beef rib

  • 1 bunch green onion

  • Maggi seasoning sauce
  • Worcestershire sauce

  • For the sauce, on a medium heat griddle, roast the tomatoes, onion, and garlic. Set aside.
  • On the same griddle, heat the oil and fry the chiles until they are golden all around. Set the griddle aside.
  • In a mortar and pestle, grind the garlic with the coarse salt until you have a paste. Add the onion, chiles, tomatoes, and work until you obtain a sauce, gradually adding lemon juice to season and help mash all the ingredients. Set aside.
  • In the same griddle where you fried the chiles, cook the seasoned beef rib with salt and pepper until browned on both sides. Remove.
  • Chop the rib finely and return it to the same griddle to finish cooking. There, cook the green onions with a little lemon juice, Maggi seasoning, and Worcestershire sauce to taste until they are tender.
  • Serve the meat in warm tortillas, accompanied by the green onions, stone-ground green sauce, and lemon juice. Enjoy.
