Roast Chicken with Orange

A delicious roast chicken with orange that has a great flavor from the orange sauce, making it a luxurious dish.

  • First, we prepare the sauce by sautéing the onion and carrot. Next, we will add the orange juice and sugar.
  • When it comes to a boil, splash in the wine and let it simmer over medium heat until it reduces by half. Blend everything and strain.
  • If the sauce is too thick, add a little water to make it lighter.
  • On a baking tray, place the chicken, which we have previously seasoned with salt, pepper, a bit of oregano, and thyme.
  • Preheat the oven and then place the tray at 180 degrees for 60 minutes. After 10 minutes of baking, pour the sauce over the chicken and baste it with the sauce every 10 to 15 minutes.
  • After the time has passed, remove the chicken and mix the sauce with the juices released by the chicken in a saucepan. While we thicken the sauce, we can keep the chicken warm in the turned-off oven covered with aluminum foil.
  • Serve the chicken with a bit of sauce and the rest in a gravy boat. We can also accompany it with some roasted potatoes.
