Roast Chicken with Potatoes

  • 1 cup butter, at room temperature
  • 1 clove garlic, roasted
  • 1 tablespoon onion powder
  • 1 tablespoon oregano
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 chicken, approximately 1.5 kilos, skin-on and cleaned
  • 1 pinch salt
  • 1 pinch pepper
  • 3 cups new potatoes, cut in half
  • 2 cups sausages, shaker
  • 1/4 cups olive oil
  • pickled Jalapeño chiles, for serving
  • tortillas, for serving
  • potato chips, for serving
  • salsa, mashed, for serving
  • lime, for serving

  • Preheat the oven to 220° C
  • In a bowl, mash the softened butter with the roasted garlic and mix in the onion powder, oregano, cumin, and paprika. Brush the chicken with the prepared butter.
  • On a tray or a rack, place the chicken, add the potatoes with sausages, season with salt and pepper to taste, drizzle with olive oil. Reserve.
  • Bake for 30 minutes at 220° C, remove from the oven, and brush again with the cooking juices, bake for another 40 minutes at 180°C or until well cooked. Serve with pickled chiles and tortillas; enjoy.
