Roasted Chicken in Macha Sauce

If you like spicy food, this dish is perfect for you; this time we will prepare roasted chicken in macha sauce! This sauce is typical of the city of Orizaba, Veracruz, and has been prepared since pre-Hispanic times. You will love it!

  • 100 grams morita chile, for the sauce
  • 5 árbol chiles, for the sauce
  • 50 grams peanuts, peeled, for the sauce
  • 1 teaspoon coarse salt, for the sauce
  • 5 cloves garlic, for the sauce
  • 1 teaspoon cumin powder, for the sauce
  • 100 milliliters olive oil, for the sauce
  • 1 tablespoon honey, for the sauce
  • 1 kilo chicken, drumstick and thigh, for the chicken
  • salt, for the chicken

  • 1 tablespoon butter, for the chicken
  • lemon, for the chicken

  • Clean the dried chilis by removing the stems and seeds with a knife or kitchen scissors; set aside the cleaned chilis.
  • In a skillet over medium-low heat, add the garlic, morita chili, árbol chili, and peanuts. Roast until they start to release their aroma, add a little olive oil, and continue cooking over low heat.
  • In a blender jar, add the ingredients from the skillet, the remaining olive oil, coarse salt, and honey, blend and set aside.
  • In a medium-low saucepan, add the butter, wait for it to melt, and incorporate the chicken pieces one by one, adding salt and pepper until they turn golden. Remove and set aside.
  • In a baking dish, arrange the chicken pieces and add macha sauce to taste.
  • Bake at 200°C for 30 minutes. Decorate with lime and cilantro.
