Preheat the oven to 200 degrees Celsius and prepare a baking tray with aluminum foil, greasing it with vegetable spray.
Place a chicken breast on a clean surface, on the left vertical side place 2 slices of ham, goat cheese, and arugula. Carefully roll the breast and secure with 1 or 2 toothpicks. Repeat with the remaining breasts.
Season the breasts with salt and pepper and place them on the tray.
Bake for 15 minutes or until the chicken is golden and cooked through.
