Shredded Meat in Chipotle Sauce

Prepare this classic dish from Mexican families: rich and juicy shredded meat in chipotle sauce with potatoes. Its spicy touch and the delicious flavor of chorizo give it an exceptional twist. Serve with freshly made corn tortillas.

  • 2 liters water
  • 1 kilo skirt steak, cut into cubes
  • 3 cloves garlic
  • 1/2 white onions
  • 1 tablespoon salt
  • 5 chipotle chiles, canned, for the sauce
  • 2 tomatoes, poached, for the sauce
  • 1 cup chorizo
  • 1 cup white onion, sliced
  • 1 tablespoon garlic, finely chopped
  • 6 tomatoes, poached and cut into cubes
  • 2 leaves bay
  • 1 cup potato, cooked and cut into medium cubes
  • corn tortillas, for serving
  • white rice, for serving

  • Cook the meat in a pot with boiling water, garlic, onion, and salt until tender. Remove the meat, let it cool, and shred it, reserving the cooking broth.
  • For the sauce, blend the chipotle pepper, the tomato, and the reserved broth.
  • Heat a deep skillet over medium heat, cook the chorizo until browned, add the onion, garlic, tomato, and bay leaf, and cook for 10 minutes. Incorporate the sauce and cook for 15 minutes or until thickened.
  • Add the shredded meat and potatoes, cook a few more minutes, and season to taste with salt.
  • Serve on a plate and accompany with white rice.
