Slice the onion into thin julienne strips and slice the sausage diagonally to make the cuts slightly elongated for a better presentation.
Put the chipotle peppers and Maggi sauce in the blender.
In a saucepan, heat the oil and brown the sausages.
Once the sausages are browned, add the onion and then the mixture of peppers, pineapple juice, and seasoning sauce. Let it cook until it starts to boil, approximately 8 minutes.
Place on a plate and add parsley for garnish; you can serve it with habanero crackers or flour tortillas.
