Spinach and Goat Cheese Stuffed Chicken

This recipe is a delicious way to enjoy chicken with a gourmet touch thanks to the goat cheese and spinach.

  • 4 chicken breasts
  • 4 cups spinach, washed and disinfected
  • 100 grams goat cheese
  • 4 tablespoons olive oil
  • 4 tablespoons peppermint, chopped fresh
  • pepper, to taste

  • Wash the chicken breasts and cut an opening halfway through so they look like in the picture.
  • Season with salt and pepper and cook in a grill-type pan for 10 minutes on each side or until grill marks appear on the chicken and it is almost cooked.
  • In another pan, heat the olive oil and add the spinach. Season with salt and pepper and stir with a wooden spoon until the spinach is well cooked (5-10 minutes).
  • Remove from heat, add the mint and goat cheese and mix well.
  • Preheat the oven to 180 degrees Celsius.
  • Stuff each breast with the goat cheese and spinach filling and place in a baking dish.
  • Bake the chicken for 5 minutes or until the chicken is fully cooked. Serve.
