Wash the chicken breasts and cut an opening halfway through so they look like in the picture.
Season with salt and pepper and cook in a grill-type pan for 10 minutes on each side or until grill marks appear on the chicken and it is almost cooked.
In another pan, heat the olive oil and add the spinach. Season with salt and pepper and stir with a wooden spoon until the spinach is well cooked (5-10 minutes).
Remove from heat, add the mint and goat cheese and mix well.
Preheat the oven to 180 degrees Celsius.
Stuff each breast with the goat cheese and spinach filling and place in a baking dish.
Bake the chicken for 5 minutes or until the chicken is fully cooked. Serve.
