Spinach Stuffed Chicken Breasts

  • 1 cup green beans, cooked, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, skinless, for the sauce
  • 2 cups spinach, only leaves, for the sauce
  • 1 1/2 cups oat milk, for the sauce
  • 1 cup requesón, for the filling
  • 1 teaspoon garlic powder, for the filling
  • 2 cups spinach, in strips, for the filling
  • 600 grams chicken breast, piece of 200 g each, skinless and boneless
  • 1 teaspoon olive oil
  • pinches salt, Himalayan
  • black pepper, ground, for seasoning

  • For the sauce: Blend the cooked green beans with onion, garlic, spinach, oat plant milk, enough salt, and pepper until you get a smooth mixture. Set aside until use.
  • For the filling: Mix the ricotta cheese with garlic powder and spinach in a bowl. Season with salt and pepper.
  • Open the breasts by making a horizontal cut without cutting through to the other side, then fill with the ricotta and spinach mixture, close with wooden toothpicks, and season with salt and pepper.
  • Pour a little olive oil into a non-stick skillet, place the stuffed breasts, and brown over low heat on both sides. Once the breast is browned, pour in the green bean sauce you blended earlier, cover, and cook for 20 minutes over low heat. Remove from heat and set aside.
  • Serve the spinach stuffed chicken breast and accompany with steamed vegetables.
