Spinach Stuffed Loin with Ricotta

This loin recipe is an ideal dish for a special lunch or dinner but easy to prepare, healthy, nutritious, and full of flavor. The combination of textures of the pork and the spinach and ricotta filling makes it a great choice to enjoy in good company.

  • 1 tablespoon garlic, finely chopped, for the spinach

  • For the spinach, heat the Ninja Foodi® in sear/saute mode, first on high temperature and then reduce to medium and melt the butter, sauté the garlic and onion in it for 5 minutes until it becomes transparent; add the spinach, season with salt and pepper.
  • Place the loin on a cutting board and make cuts so that it is extended, spread the ricotta and the prepared spinach, roll up the loin and tie it with hemp string to maintain the shape of the roll.
  • Use the air fryer lid of the Ninja Foodi® and select the bake/roast option (Temp 375° F) for 30 minutes.
  • Remove the loin from the Ninja and let it rest for 10 minutes at room temperature; slice and serve with beet salad.
