Stuffed Chicken Breasts with Lettuce and Sun-Dried Tomatoes

These chicken breasts are juicy and delicious. They are filled with an exquisite mixture of lettuce, goat cheese, and sun-dried tomatoes that make a perfect match. The best part is that they are very easy to prepare!

  • 4 chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 2 tablespoons vegetable oil
  • 1 package Eva® butterhead lettuce
  • 100 grams goat cheese
  • 1 cup sun-dried tomatoes
  • 4 tablespoons basil

  • Preheat the oven to 180°C.
  • Butterfly the chicken breasts with the help of a knife. Season with salt and pepper on both sides and sear in a pan over high heat with oil. Drain.
  • Fill each breast with French Lettuce Eva®, goat cheese, sun-dried tomatoes, and basil leaves.
  • Place on a baking tray and bake for 30 to 40 minutes or until the breasts are cooked. Serve immediately.
