This Christmas turkey recipe is stuffed with a mixture of ground meat flavored with bacon, Serrano ham, and chopped apples. The beautiful golden color of the turkey is achieved with a kitchen torch.

1 turkey, 8 kilograms
1/4 cups butter
1 pinch nutmeg
2 cups white wine
250 grams ground beef
250 grams ground pork
1 slice bacon, 1 cm thick, ground
50 grams serrano ham, chopped
2 apples, peeled and diced
200 grams seedless prune
1/2 glasses sherry
1 pinch cinnamon powder
2 tablespoons cornstarch
1 cup red wine
1 tablespoon sugar

Mix the ground beef, ground pork, and chopped bacon. Add the Serrano ham, diced apples, chopped prunes, and Sherry. Season with salt and pepper.
Stuff the turkey with the meat mixture and season the outside of the turkey with salt and pepper.
Preheat the oven to 200 degrees.
Place the turkey in a bag or wrap it in aluminum foil and make perforations for steam to escape.
Remove the turkey from the oven and collect the juices that the turkey released.
Place the turkey in the oven for 4 hours (30 minutes per kilogram). During the last hour, open the bag and let the turkey brown a bit.
Melt the butter and mix it with the white wine, then inject the turkey with this mixture.
Using a kitchen torch, brown the entire turkey to achieve a nice color.
To prepare the gravy: mix 2 tablespoons of cornstarch with half a cup of water and stir with a cup of red wine.
In a saucepan, melt 1 tablespoon of sugar. Once caramelized, add the previous wine mixture and let it cook over medium heat for 5 minutes.
Add the juices released by the turkey and season with salt and pepper.
Serve the gravy hot alongside the turkey.
