Stuffed Christmas Turkey

This Christmas turkey recipe is stuffed with a mixture of ground meat flavored with bacon, Serrano ham, and chopped apples. The beautiful golden color of the turkey is achieved with a kitchen torch.

  • 1 turkey, 8 kilograms
  • 1/4 cups butter
  • 1 pinch nutmeg
  • 2 cups white wine
  • 250 grams ground beef
  • 250 grams ground pork
  • 1 slice bacon, 1 cm thick, ground
  • 50 grams serrano ham, chopped
  • 2 apples, peeled and diced
  • 200 grams seedless prune
  • 1/2 glasses sherry
  • 1 pinch cinnamon powder
  • 2 tablespoons cornstarch
  • 1 cup red wine
  • 1 tablespoon sugar

  • Mix the ground beef, ground pork, and chopped bacon. Add the Serrano ham, diced apples, chopped prunes, and Sherry. Season with salt and pepper.
  • Stuff the turkey with the meat mixture and season the outside of the turkey with salt and pepper.
  • Preheat the oven to 200 degrees.
  • Place the turkey in a bag or wrap it in aluminum foil and make perforations for steam to escape.
  • Remove the turkey from the oven and collect the juices that the turkey released.
  • Place the turkey in the oven for 4 hours (30 minutes per kilogram). During the last hour, open the bag and let the turkey brown a bit.
  • Melt the butter and mix it with the white wine, then inject the turkey with this mixture.
  • Using a kitchen torch, brown the entire turkey to achieve a nice color.
  • To prepare the gravy: mix 2 tablespoons of cornstarch with half a cup of water and stir with a cup of red wine.
  • In a saucepan, melt 1 tablespoon of sugar. Once caramelized, add the previous wine mixture and let it cook over medium heat for 5 minutes.
  • Add the juices released by the turkey and season with salt and pepper.
  • Serve the gravy hot alongside the turkey.
