  • 500 grams ground beef
  • 2 tablespoons olive oil
  • 1 cup onion, finely chopped
  • 3 cloves garlic
  • 1 cup beef broth
  • 3 tablespoons tomato purée
  • 1/3 cups raisins
  • 1/3 cups olives, chopped
  • salt, to taste
  • pepper, to taste
  • 5 plantains
  • vegetable oil, for frying

  • Heat olive oil in a large skillet over medium heat. Add the onion and sauté for 4-5 minutes. Add the garlic and cook for 1 more minute.
  • In another pot, boil the plantains with their skins until soft. Peel the plantains and mash them with a fork.
  • Add the ground beef to the skillet and cook for 5 minutes or until browned. Add the beef broth, raisins, olives, and tomato puree, mix well and allow to boil. Season with salt and pepper. Lower the heat, cover the skillet, and cook for 20 minutes.
  • Form balls with the plantain mixture and fill them like croquettes.
  • In a skillet with just a little oil, just enough to prevent sticking, fry the croquettes.
