Prepare this stuffed marinated leg recipe for Christmas, with a combination of ingredients that balance the flavors; it is also an excellent option for this festive season and celebration.
2 boxes Del Fuerte® ground tomatoes with chipotle chiles, 210 g each
4 guajillo chiles, soaked
3/4 cups apricot jam
1/4 onions, roasted
3 cloves garlic, roasted
1 bunch herb bundle
1 pork leg, 3 kg
apricot dried apricots, for stuffing
walnuts, for stuffing

Preheat the oven to 180 °C.
Blend the Ground Tomatoes with Chile Chilpotle Del Fuerte® with the chipotle chiles, guajillo chiles, apricot jam, onion, garlic, and season. Set aside.
Make small incisions on the leg using a knife and insert the dried apricots and walnuts. Set aside.
Place the pork leg in an oven-safe dish and pour the sauce over the leg, then add the herbs. Bake at 180° C for 90 minutes. Let the meat rest for 15 minutes before slicing.
Serve the stuffed leg on a platter and accompany with mashed potatoes.
