In a bowl, mix the meat with the egg, breadcrumbs, salt and pepper, paprika, and mustard. Mix well until all ingredients are incorporated.
In a tray lined with aluminum foil, spread the meat until it covers the entire surface of the tray, then place a layer of Extra Special® Gouda cheese, slices of ham, and spinach on top. With the help of the aluminum foil, close the roll and compact it well to shape it.
In another tray lined with aluminum foil, place the strips of bacon overlapping each other until the tray is completely covered, then place the formed meat roll on top and roll it with the bacon, then wrap in aluminum foil to compress well and bake.
Bake for 15 minutes covered with aluminum foil, then remove from the oven, open the foil, and bake without foil for another 10 minutes. Let it rest for 10 minutes before slicing.
